Bertha's Strawberry Cake featured in Saveur May 2011




Strawberry Cake Recipe

Strawberry cake topped with strawberry cream cheese frosting, is a favorite soul food dessert;
this delicious version (pictured above) comes from Bertha's Kitchen.

16 tbsp. unsalted butter, softened, plus more for greasing pan
3 cups flour; plus more for pan
1 tbsp. baking powder
1/2 tsp. kosher salt
1 cup milk
1/2 cup seedless strawberry jam
3 tbsp. red food coloring (optional)
2 cups sugar
1 cup canola oil
1 tsp. vanilla extract
3 eggs
8 oz. cream cheese, softened
1 1-lb. box confectioners sugar, sifted
1 tsp. strawberry extract

Heat oven to 350. Grease and flour two 9" round cake pans; set aside. Whisk together flour,
baking powder and salt in a medium bowl; set aside. Whisk together milk, jam, and 2 tbsp. food coloring in a small
bowl; set aside. Beat together sugar, oil, vanilla and eggs in a mixer on medium-high speed until pale
and smooth, 2-3 minutes. In 3 additions, alternately add dry and wet ingredients to sugar mixture
beginning and ending with dry, mix until combined. Divide batter between prepared pans and smooth tops;
bake until a toothpick inserted in the middle of cakes comes out clean, about 40 minutes. Let cool 15
minutes, unmold, then cool completely.

In a large bowl, beat butter and cream cheese on high speed of a mixer until smooth and fluffy, 1-2 minutes.
Add remaining food coloring, confectioners' sugar, and strawberry extract; beat until smooth. Place one
cake upside down on a cake stand, and spread 1/3 frosting over top. Cover with second cake, top side up.
Frost top and sides of cake with remaining frosting; refrigerate for 1 hour before serving. Serve at room temperature.

Pescadero, California... Our favorite little weekend getaway!


GETTING THERE
Pescadero is 15 miles south of Half Moon Bay, 2 miles inland from State 1 on Pescadero Creek Rd. San Gregorio is 10 miles south of Half Moon Bay; from State 1, turn east on State 84/La Honda Rd. and go 1 mile. Stage Rd. traces a narrow, winding inland route between the towns

A general store boasts a full-service deli with good old fashioned service. Custom sandwiches are made on our own scratch–baked rolls. All of our breads are scratch baked with no preservatives and handmade the old fashioned way. The Garlic Herb French and Artichoke French are our specialties. Our customers contact us from all over the country to ship our breads to them. So we developed a process by which we partially bake the French breads so they can be finish-baked at home. The par baked product can be frozen up to 45 days, thawed, baked, and tastes like it was made that day! Recently we expanded our gourmet food lines to include many exotic items, such as artichoke salsa, garlic salsa, garlic pesto sauce, and a large line of vinegars and oils.


We stop here every time we are in town. We either get a loaf of the artichoke garlic bread or a deli sandwich... can't go wrong with either one!

Harley Farms
Harley Farms is a restored 1910 dairy farm, with 200 alpine goats on nine acres of
pasture in Pescadero , California . The farm grew from six pet goats to today's herd, with their delicious, critically-acclaimed cheese.The Harley Farms chevre, fromage blanc, ricotta and feta cheeses are consistent winners at the American Cheese Society awards, and hold two international World Cheese Show medals. Harley Farms is open year-round for farm and dairy tours, cheesemaking classes, and events in our fabulous restored hayloft. Visitors see a working farm, and watch the milk move from goat to dairy, from curd to cheese.

Portola Redwoods State Park - Our all time favorite camping place!
Portola Redwoods has a rugged, natural basin forested with beautiful Coast Redwoods, Douglas Firs and Live Oaks. 
There are eighteen miles of trails, a 53 site campground, four group campsites and two beautiful creeks,
the Pescadero and Peter''s Creek, that run throughout the park. The air is crisp and cool with a touch of the sun...birds soar from one branch to the next, banana slugs bring a pop of color to the fern covered grounds.

Summer: Highs in the 70s to 80s, lows in the 50s.
Winter: Highs in the 40s to 50s, lows in the 30s.
